香檳世界的守護者 Henri Giraud

酒廠創建於1625年目前第12代傳人Claude Giraud，但求質精不求量多。並倡導香檳區應多用本地橡木桶，也因此Henri Giraud所用的橡木桶都來自於阿貢內森林(Argonne)，這片森林曾經提供香檳區大部份酒廠所需求的木桶，但因商業考量目前香檳區的酒廠紛紛採用Bordeaux或Burgundy的橡木桶或採用不鏽桶，目前只有Henri Giraud還在維護這份傳統，也因此家族在香檳區有不可抹煞得崇高位。

通過自家原酒品鑒及反覆的測試，Henri Giraud 這20年來對有關土壤和微氣候對橡木影響這方面的研究有傲人的成果。他說“沒有好的橡木，就不可能釀出好酒”，Hehri Giraud詳細記載Argonne那一塊土地、那一個年份的橡木對他們所釀製的酒會帶來的影響，用心的程度為他們的香檳帶來更高一階的品質。目前在法國僅有兩家酒莊在做這方面的研究。除了他們，還有Chateau Latour拉圖酒莊。只不過拉圖酒莊研究的是托臺森林(Tronçais forest)。

Robert Parker：The finest Champagne house virtually no one has ever heard of”. The reason for this being that until the 1990s their wines were only sold directly to discerning, well-informed private customers in France and Italy.
Robert Parker and Jancis Robinson having caught their respective eyes some years ago. Parker was moved to say: “This may be the finest champagne house virtually noone has ever heard of” proving himself wrong in an instant.
This is one of the few houses (Krug is another example) that conduct its primary fermentations in oak. Giraud prides itself on sourcing wood for its barrels from the slow growing, tight grained, high quality trees of the nearby Argonne forest. With such a unique, innovative approach to quality one would expect this to be reflected in the wines, it is therefore no surprise that journalists such as Tom Stevenson and Jancis Robinson have been quick to cotton on to the high quality of these wines

« Argonne »系列是Henri Giraud的頂級之作，75% Pinot Noir、25% Chardonnay，於Argonne的橡木桶中12個月，再經過8年的窖藏，是一款複雜度高、餘韻悠長的限量佳釀，瓶身上皆有編號顯示它的珍貴。2002年是第一個生產年份，僅9000瓶。2004年是酒廠剛釋出第二個年份，僅8400瓶。

«Fut de Chene » 系列 70% Pinot Noir，30% Chardonnay來自Ay Grand Cru，於Argonne橡木桶發酵達12個月。瓶口使用24K金扣，特殊瓶身設計要求手工進行除渣。瓶身印有可追踪葡萄來源鐳射编碼，從编碼可得知存酒用的橡木桶來自哪片林區的橡樹及葡萄園來源鐳射编碼，僅生產2500箱。同時也是Jancis Robinson香港晚宴指訂用香檳酒款。

«Code Noir Brut » 黑色密碼(Blanc de Noirs)是對15世紀前輩先賢用紅葡萄釀製白酒的致意。«Code Noir Rose »桃色密碼則是使用古老技術演繹粉紅酒中的勞斯萊斯(Rose Champagne)。

«Henri Giraud Esprit de Giraud »精靈系列是讓人初窺Giraud家族釀製香檳的神髓，體會Ay風土絕妙滋味；分響氣泡的喜悅；«Hommage a Francois Hemart » (1625-1705)則是緬懷先祖Francois Hemart與Dom Perignon最初在Ay的貢獻所出的紀念款香檳
